eats: beef + cabbage + barley


I thought I'd share with you my newest, most favorite recipe that I've put together. I was inspired my friend/doula Talitha and an Instagram photo of her own beef and cabbage (who says Instagram food pics are redundant and useless?). It just looked so yummy and comforting I thought I'd just wing it and throw together my own version.

I have not seen any recipes for this combo although it is a common one and one that has certainly existed from the dawn of time. I just put together what I had. It was so good. So I thought I'd share it with you, due to the ease of assembly and deliciousness quotient.

Beef and Cabbage with Barley

You need:
(for the beef and cabbage)
2 lbs ground beef 
1 head of cabbage
4 cups beef broth
1 large onion
plenty of garlic
salt, pepper, garlic, Herbamare all to taste

(for the barley)
2 cups of beef broth + a little water
1 cup of barley (we used pearled)

How:
Dice onion and cook until translucent in oil. Add ground beef and cook until brown. Chop cabbage, add to pot. Pour in 4 cups of beef broth, add garlic and seasonings and cook on medium heat until cabbage is wilted. Season to taste as desired. 

Meanwhile, boil beef broth for barley and add the barley. Reduce heat and cover, and simmer 15-20 minutes or until barley is tender. Add a little water if necessary during cooking. It will still be a little chewy when finished but I think that adds to the dish. 

Serve beef and cabbage over barley in a bowl with plenty of broth. Enjoy!

PS: This could be modified to be gluten free if made with another grain!

  1. I'm trying this with TVP and veggie broth! Give me a few days and I'll let you know if the vegan option works.
